Sweetbird Mint Syrup

This powerful taste can be effortlessly added to drinks and desserts with Sweetbird Mint Syrup. Gluten-free and approved by the Vegan Society, this syrup which benefits from containing real mint is an excellent addition to chocolate milkshakes, strawberry cocktails, cakes and more.

The History 

From being used to create toothpaste to its place in ancient mythology, mint has had quite a journey through history. Speaking of ancient mythology, the herb was the plot point for a colourful story involving Plutos wife, Persephone, and a nymph romantically linked with Pluto. It is said Proserpine hated her love rival so much that she transformed them into a ground-clinging plant. The rival, known as Minthe, was unable to be changed back into a nymph by a sympathetic Pluto. He did, however, give her with the ability to supply the air with sweetness when her leaves were crushed something she was no doubt thrilled about. 

Away from such tales, the history books reveal the Romans introduced mint to England at some point in the 15th century. It was mentioned in John Gardiners 1440 book, the Feate of Gardening, although it is under the name myntys. William Turner, described as the Father of British Botany, noted two positive things about mint: it was a pleasant ingredient in sauces, and the herb also had good soothing qualities for those suffering with a bad stomach. 

Relating to its benefit for the digestive system, mint actually has an extensive backstory when it comes to being a medicinal property. The herb is still used for its menthol in helping battle cold symptoms. For hundreds of years, mint has also been an important aspect for oral hygiene. Along with being utilised as a breath freshener, dried mint leaves were a precursor for teeth whitening.

Today, mint is found virtually everywhere. It resides in beauty products. Its still a part of medicinal treatments. Gardens across the country feature the attractive plant. But perhaps most importantly in this case, mint is also used in a plethora of drinks and dishes. 

Recipe Idea

Gluten-Free Chocolate Cake with Mint Cream 

If you want to have a delicious chocolate cake, but need to avoid the usual gluten that comes along for the ride, youve stumbled across the right recipe. This cake keeps all the scrumptious flavours youd expect, kicks out gluten, and also adds a lush mint-flavoured whipped cream, which can be made at home in seconds using a whipped cream dispenser and cream chargers!

What you will need: 

  • Butter, for greasing

  • Plain chocolate (250g)

  • Tinned chickpeas (400g)

  • Four eggs

  • Caster sugar (150g)

  • Gluten-free baking powder (1/2 tsp)

  • Sweetbird Mint Syrup (60ml)

  • Fresh cream (240ml)

  • Icing sugar (1 tbsp)

- Preheat the oven to gas mark 4/180C. Grab a 23cm round cake tin and grease with the butter. Line the tin with parchment paper and grease again. 

- Break the plain chocolate into pieces and place into a heatproof bowl. Set the bowl over a pan with simmering water. Keep stirring the chocolate until it has completely melted. Once done, remove from the heat.

- Rinse and drain the tin of chickpeas. Along with the four eggs, add the chickpeas into a food processor. Blend the two ingredients together until a smooth mixture is created. Pour in the caster sugar and baking powder, and use the pulse setting to blend these ingredients together. Now pour the melted chocolate into the processor and blend until the mixture is once again smooth. Note: if the chocolate starts to stick to the sides of the processor, scrape this back into the mixture to ensure everything is completely mixed. 

- Place the chocolate mixture into the prepared cake tin, making sure it is evenly spread. Put the tin in the oven for around 40 minutes. To check it is fully cooked, insert a knife into the centre of the cake. If the knife comes out clean, the cake is ready to come out of the oven. Put the tin on a wire rack for 15 minutes to cool, and then turn the cake out onto a suitable serving plate. 

- To prepare the cakes whipped cream topping, theres one device you need in your culinary repertoire: a whipped cream dispenser. Pour both the fresh cream and Sweetbird Mint Syrup into the dispenser, close it up securely, and ensure a cream charger is properly screwed into the device. For up to ten seconds, shake the dispenser to instantly create a fluffy, mint-infused whipped cream.

Note: Depending on the amount of whipped cream desired, it may be necessary to use multiple cream chargers/ more whipping cream. Add more syrup as required.

- Carefully squirt the whipped cream around the edge of the top of the chocolate cake. For that finishing touch, dust the centre of the cake with icing sugar.
