Sweetbird Eggnog Syrup

It might just be served traditionally during the Christmas season, but the delicious flavour of eggnog can be enjoyed year-round thanks to Sweetbird Eggnog Syrup. The creamy and nutmeg flavours of this popular holiday drink are expertly captured in the syrup, and its a great addition to the likes of hot chocolate and coffee. The History 

Although its exact lineage is up for debate among historians, most are in agreement eggnog is an extension of posset, a medieval drink which was invented in Britain. Posset was a hot beverage which had milky and ale-like qualities. By the 13th century, the original iteration of posset had, in some circles, taken on additional ingredients such as figs and eggs. While it started to closer resemble the eggnog we know today, this drink, which contained expensive products at the time such as milk and eggs, was typically only available for the wealthy to enjoy. 

During the 18th century, eggnog made its journey to the place where it became famous: the United States. As American colonies had a bountiful number of farms and as a result, cows and chickens important components of the beverage were cheaper to acquire. Combine this with cheaper rum, which was soon to become a signature ingredient, and the drink was much more accessible to the regular American compared to their English counterparts. 

When the American Revolutionary War saw the countrys rum supply from the Caribbean become reduced, Americans turned to other alcoholic drinks. First they went with domestic whisky, although the focus soon shifted to bourbon. When bourbon was too pricey in certain colonies, this was substituted with homemade moonshine. Whatever ingredients were added to the mix, eggnog was proving to be a hit all across the US. George Washington, the first president of the United States, even served guests an eggnog-like beverage based on his own recipe. 

Throughout history, eggnog has been enjoyed during the Christmas season. This is helped by the drink being warm and spiced, giving it qualities ideal for soothing against the cold winter weather. 

Recipe Idea

Mince Pies with Eggnog Cream

Whether theyre being served after Christmas dinner, as gifts in thoughtful hampers, or to Santa to keep him fuelled up for the rest of the night, mince pies are one of the most delicious holiday treats. This recipe utilises pre-made mincemeat to help simplify things, while the addition of an eggnog-flavoured whipped cream brings an extra tasty element to proceedings. You can make the whipped cream at home in ease, with a whipped cream dispenser and cream chargers. 

What you will need: 

  • High-quality mincemeat (350g)

  • Plain flour (225g)

  • Unsalted butter (125g)

  • Caster sugar (2 tbsp)

  • One large egg, beaten

  • Milk, for glazing 

  • Sweetbird Eggnog Syrup (60ml)

  • Fresh cream (240ml)

  • Whipped cream dispenser

  • Cream chargers

- Lightly butter a 12-cup muffin tin. 

- In a food processor, place the flour, butter and sugar. Whizz these ingredients together until the mixture begins to resemble breadcrumbs. Now by using a feeder tube, slowly add and combine the egg to the mixture. Tip the mixture out and further bring it together with your hands. Now wrap it in cling film and leave to chill for an hour. 

- When the hour is up, remove the cling film from the pastry. Now roll the pastry out onto a floured surface, creating a thin layer which will cover all 12 mince pies. Use a fluted pastry cutter to cut out 12 circles. These circles should be enough to fill muffin tin cups. Press the pastry circles into each cup, and then fill these with the mincemeat. Now cut a further 12 circles these ones being slightly smaller and use these to cover the mincemeat. To seal the pastry together, press the edges together with a fork. Use a knife to make a small cut into the top of each pie. Also brush them with milk. Leave to chill for around 30 minutes. 

- Ten minutes before the chilling period is over, preheat the oven to gas mark 6/200C. Place the pies in the oven for 20 minutes, or until they turn a golden brown colour. Remove and allow them to cool on a wire rack. 

- Pour both the fresh cream and the Sweetbird Eggnog syrup into a whipped cream dispenser. Ensure the device is closed firmly, and attach a cream charger, before shaking the device energetically for a few seconds to produce a fluffy, eggnog-infused whipped cream. 

Note: Depending on the amount of whipped cream desired, it may be necessary to use multiple cream chargers/ more whipping cream. Add more syrup as required.

- With the mince pies still warm, place onto suitable plates and serve with a generous portion of the eggnog whipped cream.
