Sweetbird Sugar Free Peach Iced Tea Syrup

Once youve sampled the light and refreshing taste of iced tea, its hard to return to a regular cup of tea. This Sweetbird Sugar Free Peach Iced Tea Syrup captures the essence of the drink expertly, while it also brings the sweet and fruity flavour of peach to the table. This syrup is the same as Sweetbirds classic peach iced tea concoction, except it possesses the added health benefit of being free of all sugar. 

Along with being approved by the Vegan Society, Sweetbird syrups also have the advantage of being free from artificial flavours, gluten and GMO.

The History 

Based on archaeological evidence, Chinas Zhejiang Province is where the domestication of peaches may have begun. The research suggests peaches were around in the area as far back as 6000 BC. The fruit didnt stay exclusive in China for too long, as it is documented a domesticated peach found its way to Japan between 4700 and 4400 BC. It did, however, take a considerably longer period of time for the peach to reach Europe. It was being cultivated in Greece by 300 BC, and, despite the lack of evidence, it is said that Alexander the Great was the one to introduce the peach into Europe. Fast forward to the 1600s, and the fruit finally found its way to England. 

As for peach being an ingredient in iced tea, this is only a relatively recent phenomenon. This is understandable when you consider iced tea was only first commercialised at the start of the 1900s. But the growth of iced tea was rapid after it made a giant splash at the St. Louis Worlds Fair in 1904. Its popularity was especially noticeable in the United States. As of today, it is estimated 85% of tea consumed by Americans is served over ice. Naturally, other variations of iced tea such as peach iced tea were developed. Peach is seen as great flavour to match with iced tea, and this beverage is found in various forms across the world. 

Recipe Idea

Spanish Orange Cake with Almonds 

Utilising whole oranges and ground almonds, this classic cake from Spain is sure to be a hit as an after-dinner treat. The cake itself is wonderfully moist and benefitting from a light texture. The cake is also joined by a decadent whipped cream thats flavoured with peach iced tea. This cream can be made at home in an instant using a whipped cream dispenser and cream chargers.

What you will need: 

  • Two oranges

  • Five eggs, separated

  • Ground almonds (200g)

  • Caster sugar (200g)

  • Flaked almonds (2 tbsp)

  • Sweetbird Sugar Free Peach Iced Tea Syrup (60ml)

  • Fresh cream (240ml)

  • Whipped cream dispenser

  • Cream chargers

  • Icing sugar, for decoration

- Scrub the two oranges and, with their skins still intact, roughly chop them up. Remove any pips and place the orange slices into a small saucepan. Add a tablespoon of water into the pan. Now cover the pan and leave it on a low heat for around 30 minutes. The aim is for the orange slices to go soft and for any excess liquid to evaporate. Once done, leave to cool. Now with a blender or food processor, finely chop the oranges. 

- Preheat the oven to gas mark 4/180C. Grab a nine-inch springform cake tin and line the bottom and sides with baking parchment. 

- In a large bowl, whisk up the egg whites until they take the form of stiff peaks. Gradually pour half of the caster sugar into the bowl, and continue to whisk for about a minute. 

- In a separate bowl, whisk together the remaining caster sugar and egg yolks. Do this for about three minutes, or until the mixture reaches a rather thick consistency and is pale in colour. Mix in the finely chopped oranges. Now gently fold the ground almonds into the mixture. 

- Place three dollops of the whisked egg whites into the main mixture, stirring together to help loosen it up. Now with a large metal spoon, gently fold the remaining egg whites into the mixture. Pour the mixture into the cake tin and smooth out the top. Scatter the flaked almonds onto the cake mix. 

- Place the cake in the oven for 50 minutes. The cake should have a golden appearance and, when a knife is inserted into the centre, it should come out clean. Once done, remove the cake from the oven and leave in the tin to cool. 

- Place the fresh cream and Sweetbird Sugar Free Peach Iced Tea Syrup into a whipped cream dispenser. Ensure the device is securely shut, and attach a whipped cream charger. Now, shake the device energetically for ten seconds to produce a light, fluffy whipped cream infused with a peach iced tea flavour.

Note: Depending on the amount of whipped cream desired, it may be necessary to use multiple cream chargers/ more whipping cream. Add more syrup as required.

- Turn the cake out of the tin and transfer it to a suitable serving plate. Dust the cake with icing sugar. Serve the fluffy, peach iced tea-flavoured whipped cream on the side.
