The History

When compared to the origins of tea, which dates back some 5,000 years, the iced variation is only a baby. While there are documents from the 17th century which note the use of iced tea, the drink as we know it today was reportedly first invented during the 1860s. First seen as a novelty, the drink would soon become widespread across the United States. Recipes started to appear in cookbooks for iced tea a decade later, and the beverage was found on menus at hotels and railway stations.

The popularity of iced tea exploded after the drink made an appearance at St. Louis 1904 Worlds Fair. Richard Blechynden, a tea plantation owner and merchant, decided on selling iced tea at the event due to circumstances out of his control. The Worlds Fair was taking place on a hot summer day, the type of climate which wasnt conductive towards profitable sales of his regular hot tea. Realising that fair goers would be seeking a cold beverage to provide relief from the intense St. Louis heat, Blechynden created an iced version of his tea. The decision proved to be a hugely profitable one, and this placed iced tea on the road to being a commercialised product.

What was once a beverage enjoyed solely during the summer months, iced tea is now sold at all points of the year. Various brands across the world, including the UK-based Lipton, package iced tea in bottles and sell them in supermarkets. Many different variations of iced tea are also available, ranging from fruity options to those flavoured with mint. One century after it was commercially launched, iced tea is one of the most popular beverages on the planet.

Recipe Idea

Peach Cobbler with Iced Tea Cream

Peach and iced tea work together excellently as a drink, and, as this recipe demonstrates, thats also the case as a dessert. The cobbler itself is a perfect balance of spice, sweetness and succulent peaches, while the iced tea-flavoured whipped cream adds a refreshing element to the dish. This cream can be made at home in seconds, using a whipped cream dispenser and cream chargers.

What you will need:

  • Eight peaches

  • Caster sugar (120g)

  • Dark brown soft sugar (100g)

  • Ground cinnamon (1/2 tsp)

  • Fresh lemon juice (1 tsp)

  • Cornflour (2 tsp)

  • Plain flour (125g)

  • Baking powder (1 tsp)

  • Unsalted butter (85g)

  • Water, boiled (60ml)

  • Caster sugar (3 tbsp)

  • Sweetbird Original Iced Tea Syrup (60ml)

  • Fresh cream (240ml)

- Preheat the oven to gas mark 7/220C.

- Peel the peaches and remove the stones. Cut the peaches into hearty chunks and place into a large bowl. In the same bowl, also pour in 50g dark brown soft sugar, 60g caster sugar, the ground cinnamon, cornflour and fresh lemon juice. Mix and toss all of the ingredients to ensure the peaches have an even coating. Place the mixture into a suitable baking tray. Now put the tray into the oven for ten minutes.

- While the peach mixture is cooking, you can focus on the crumble topping. Place the rest of the dark brown soft sugar and caster sugar into a separate large bowl. Also add the flour, baking powder and a dash of salt. Mix these ingredients together. Using your fingertips, blend the butter into the mixture and continue doing so until it starts to bear a resemblance to coarse breadcrumbs. Now pour in the boiling water and stir until it just combines.

- Remove the baking tray from the oven. Spoon the topping over the peach mixture and sprinkle the caster sugar on top. Put the baking tray back in the oven for approximately 30 minutes. The cobbler will be ready when the topping has a golden colour. When done, remove from the oven.

- Place the fresh cream and Sweetbird Original Iced Tea Syrup into a whipped cream dispenser. Securely close the lid of the dispenser and dont forget to attach a charger. Give the dispenser an energetic shake for a few seconds to produce a fluffy, iced tea-flavoured whipped cream!

Note: Depending on the amount of whipped cream desired, it may be necessary to use multiple cream chargers/ more whipping cream. Add more syrup as required.

- Scoop up generous portions of the peach cobbler and place into bowls. Finish with liberal servings of the fluffy, iced tea-infused whipped cream on top.
