Ingredients:

  • 400 gram coarsely minced lamb
  • 2 tablespoon vegetable oil
  • 1 shallot, chopped fine
  • 1 carrot, chopped fine
  • 1⁄2 cup peas
  • 1 tablespoon flour
  • 1 big pinch pepper
  • 1 teaspoon chopped parsley
  • 2 medium potatoes
  • 1 egg yolk
  • 3 tablespoon half and half or milk
  • 1 tablespoon butter
  • Salt to taste

Method:

  1. Prepare the Lamb Filling: Heat oil over medium-high heat and sauté chopped shallot until fragrant. Add minced lamb, breaking up any lumps, and cook until lightly browned. Stir in peas, carrots, and sprinkle with flour. Cook gently until vegetables are tender. Slowly add boiling water, stirring well, then cover and simmer until meat is cooked through. Season with pepper and parsley, adjust salt to taste, and transfer mixture to a buttered ovenproof dish.
  2. Prepare the Mashed Potato Topping: Boil potatoes until fully cooked, then pass through a potato ricer while still hot. Let cool slightly, then mix in beaten egg yolk, half and half (or milk), and butter. Transfer mixture to a whipped cream dispenser, charge with a nitrous charger, and shake well. Replace charger with a large nozzle or tip, then pipe mashed potato evenly over the lamb filling in the dish.
  3. Bake the Pie: Preheat the oven to 350°F (175°C) and bake the pie for 15-20 minutes, or until the top is golden brown and the filling is heated through.
