Background

Delicate with a vibrant, enticing shade of red, cherries are even more delectable than their appearance indicates. Along with being found in a wide range of savoury dishes, the fruit is a particular favourite for dessert chefs. Pies, gateaus, crumbles the cherry is such a universal flavour that it can be found in a virtually endless selection of puddings. Of course, fresh cherries can be enjoyed on their own. And with Monin Natural Cherry Syrup, its also possible to provide any drink with an instant blast of cherry goodness.

The History

Even though it has an extensive history like many other fruits, the story of the cherry differs in the sense it has limited documentation over the years. It is generally believed cherries originated in Europe, perhaps in a region between the Caspian Sea and Black Sea. Another belief is the fruit has been consumed since prehistoric times. Lucius Licinius Lucullus, an ancient Roman politician, was responsible for bringing cultivated cherries from the Asia Minor region to Rome in 72 BC.

It was thanks to King Henry VIII that cherries arrived in England during the 16th century. During a trip to Flanders, a northern region of Belgium, Henry VIII was said to have developed quite a taste for the fruit. He ordered his personal gardener to bring the cherries back to England, which he duly did. They were cultivated in the village of Teynham in Kent, although it didnt take long for the fruit to extend out of Henry VIIIs personal collection and become a staple across the country.

It took a little longer for the United States to join the cherry party. During the 1600s when Brooklyn, New York was under Dutch sovereignty the region was then known as New Netherland cherries were imported into the country by ship along with early settlers. As of today, the United States is one of the biggest individual countries when it comes to cherry production, and this is mainly done in states such as Michigan, Wisconsin, Oregon, Washington and California.

Going back to England, one of the most popular uses of cherry is in the classic Cherry Bakewell. A relatively modern recipe thats a variant of the Bakewell tart, the Cherry Bakewell which is typically a small tart where an almond-flavoured fondant covers frangipane, and a half glacé cherry is placed on top has been a popular treat since its invention during the 20th century.

Recipe Idea

Bakewell Tart with Cherry Cream

This recipe takes the classic Bakewell tart and draws inspiration from a dessert it would later inspire: the cherry Bakewell. Along with a scrumptious cherry filling, the tart is accompanied by a divine whipped cream flavoured with Monin Natural Cherry Syrup.

What you will need:

  • Butter (200g)

  • Plain flour (175g)

  • Cold water (2 tbsp)

  • Caster sugar (125g)

  • Cherry jam (1 tbsp)

  • Ground almonds (125g)

  • One egg, beaten

  • Flaked almonds (50g)

  • Monin Natural Cherry Syrup (60ml)

  • Fresh cream (240ml)
  • Whipped cream dispenser
  • Cream charger

- First of all, its time to make the pastry. In a large bowl, place the flour and 75g of the butter, chilled. Rub the butter into the flour with your fingertips, continuing to do so until the mixture look like breadcrumbs. Now add the water to the mix, and stir everything together to make a soft dough. Flour a work surface and roll out the dough. Grab an eight-inch flat tin and line this with the dough. Place in the fridge for 30 minutes.

- Preheat the oven to gas mark 6/200C. Use baking parchment to line the pastry case, and then fill this with baking beans. Bake for 15 minutes, remove the beans and baking parchment, and put back in the oven for another five minutes.

- For the filling, put the remaining butter into a pan and melt. Remove from the heat and stir in the caster sugar. Now mix in the egg and ground almonds. With the cherry jam, spread this generously across the base of the pastry. Now pour the buttery almond mixture into the case. Sprinkle the flaked almonds on top. Place in the oven for approximately 35 minutes. Remove and set aside to cool.

- In a whipped cream dispenser, pour in both the fresh cream and Monin Natural Cherry Syrup and clsoe the device firmly. Place a cream charger into the charger holder and screw it into the device. Next, shake the device energetically for a few seconds to form a fluffy, cherry-flavoured whipped cream.

- Cut a slice of the Bakewell tart, place on a plate with a side of the cherry whipped cream, and enjoy.
