Background

Elderflower is a delicate, floral flavour which is a popular enhancer for a wide variety of drink and food recipes from boozy cocktails to fluffy marshmallows. Now, thanks to Monin Elderflower Syrup, it is easy to add the subtle nature of elderflower to whatever you desire.

The History

Before it was utilised as an ingredient in drinks and dishes, elderflower has a long history as a spiritual and medicinal property. At least, it is the elder plant which has such an illustrious backstory. The elder was regarded as a sacred plant, with it being guarded by the Elder Mother who resided within its trunk. Due to the fear of upsetting the Elder Mother, country folk wouldnt dare to burn or cut the wood from the tree. In addition to this, the elder was considered to be protective. People grew the tree outside their houses with the belief it would keep evil spirits out. Other superstitions included being able to see fairies by standing under an elder tree, and this same action would apparently help people avoid being hit by lightning during storms.

As a medicinal solution, elder has been used in numerous different ways, and every part of the plant from the bark to the berries was used. When dissolved in wine, elder was utilised in Chinese medicine as way of treating inflammation and joint pain. Going as far back as ancient Greece, elderflowers were consumed in an effort to encourage vomiting. Yet even today, elderflower is an ingredient recommended for various ailments. Due to possessing an anti-inflammatory effect, elderflower can be particularly beneficial to helping with cold and flu symptoms. The plant can also support the immune system, act as a relief for constipation, and alleviate hay fever.

Although it is a quintessential British flavour, elderflowers are grown across the planet. As a result, many other countries and cultures enjoy the bounties of this plant. In France, you can find liqueurs and marshmallows which include elderflower. The Italian drink Sambuca is also home to the ingredient, as are select bottles of the Scandinavian akvavit spirit. However, in the UK, elderflower is most commonly found in a cordial drink. Belvoir Fruit Farms, the most famous brand producing elderflower cordial at present, had a humble start to life in the early 1980s. It began in the kitchen of Lady Mary Manners, where she brewed up her own special recipe of the cordial, and gave the resulting 30 bottles to her friends. Now the company sells millions of bottles a year, with its elderflower cordial found on the shelves of all the major supermarkets, including Asda, Tesco and Waitrose.

Recipe Idea

Apple, Banana and Elderflower Smoothie

This apple, banana and elderflower smoothie is a fruity, fragrant delight. While the apple and banana are the starring duo, the elderflower resides in the background to deliver a welcomed floral flavour. In addition to the smoothie, this beverage is boosted to another level thanks to being topped with a banana whipped cream.

What you will need:

  • Semi skimmed milk (300ml)

  • Full-fat yogurt (50g)

  • Monin Elderflower Syrup (100ml)

  • Two apples

  • One banana

  • Monin Banana Syrup (30ml)

  • Fresh cream (120ml)

  • Whipped cream dispenser

  • NOS cream charger

- To begin with, chop up the apples and banana into chunks. Place the fruit into a blender, and also include the semi skimmed milk, full-fat yogurt and Monin Elderflower Syrup. Whizz up all of the ingredients, with the aim of creating a smooth consistency which doesnt display and visible chunks of banana or apple. When done, transfer to a suitable glass or container, and put in the fridge to chill until ready to consume.

- When it comes to producing the banana whipped cream, one kitchen gadget is imperative: a whipped cream dispenser. With this dispenser, pour in both the fresh cream and Monin Banana Syrup. Remember to ensure the cream dispenser is secured tight and a cream charger has been screwed in. Now give the device an energetic shake for a few seconds, which will result in the cream whipping up and blending with the banana syrup.

- Note: depending on which flavour you prefer, feel free to swap out the Monin Banana Syrup for either Monin Apple Syrup or a double dose of Monin Elderflower Syrup. Alternatively, if you want to bring another flavour on-board, feel free to use any syrup from the Monin range.

- When everything is ready, bring out the smoothie from the fridge. Squirt on a healthy amount of the whipped cream. Thats it. Youre now ready to enjoy a delectable drink which, once sampled, will forever be a constant fixture in your recipe repertoire.
