As with most ingredients and flavours, the French take it to the next level. Thats certainly the case with French vanilla, a delicious ice cream which places vanilla and an egg-custard base as the forefront flavours. Sweetbird French Vanilla Syrup encompasses this custard and vanilla taste sensation effortlessly, providing an excellent contrast to bitter flavours such as coffee. This British made, vegan syrup is also a fantastic addition to a wide range of beverages and desserts.

Along with being approved by the Vegan Society, Sweetbird syrups also have the advantage of being free from artificial flavours, gluten and GMO.

The History 

Native to the Caribbean and Central/South America, vanilla is believed to have first been cultivated during the 15th century in Mexico. The spice would eventually find its way to Europe, although it didnt have a grand arrival. Vanilla was considered little more than as an additive in chocolate beverages. This viewpoint changed during the early part of the 17th century. Hugh Morgan, a medical professional with a creative flair for cuisine, came up with vanilla-flavoured sweetmeats. His employer, Queen Elizabeth I, instantly fell in love with his creation. Now knowing vanilla was more versatile than first expected, it started cropping up in various other dishes including French vanilla.

It was during the 18th century when French vanilla, an ice cream variation, was first created. As a side note, the question that might be getting asked right now is: Whats the difference between ordinary vanilla ice cream and the French vanilla kind? Well this is down to the use of egg yolks as part of the French vanillas base. This is what gives this variety of ice cream its yellow shade of colour, along with a smoother and richer consistency.

A big fan of French vanilla was Thomas Jefferson, the third president of the United States. When Jefferson lived in Paris during the 1780s, he discovered the dessert. He was so enamoured by French vanilla that he made a note of the recipe and took it back to the US with him. This recipe is now found in the Library of Congress. This served as the basis of French vanillas popularity outside of its homeland, and tubs of the flavour can now be found in supermarkets across the world.

Bread and Butter Pudding with French Vanilla Cream

British desserts dont come much more traditional than a bread and butter pudding. This old-fashioned pudding is a hearty, moreish treat which is not only easy to make, but also easy on the wallet. To add that extra flourish to wow your family or guests, the pudding is also accompanied by a light and refreshing whipped cream flavoured with French vanilla., which you can make at home in an instant using a whipped cream dispenser and cream chargers.

What you will need:

  • Five slices of bread

  • Butter (60g)

  • Granulated sugar (100g)

  • Ground cinnamon (1 tsp)

  • Sultanas (50g)

  • Milk (500ml)

  • Two eggs

  • Sweetbird French Vanilla Syrup (60ml)

  • Fresh cream (240ml)

  • Whipped cream dispenser

  • Cream chargers

– Preheat the oven to gas mark 5/190C. Grab a suitable baking dish and lightly grease with butter.

– Butter the five slices of bread. Once done, cut these slices in half. Note: crusty, day-old bread is arguable best for the pudding. Bread with these characteristics is more liable to hold its shape and give the desired texture to the dessert. In a small bowl, mix together the cinnamon and granulated sugar.

– Arrange these slices of bread in the baking dish to create a layer. Along with a handful of sultanas, top the bread with the sugar cinnamon mix. Repeat the process until a second lot of bread and sultana/cinnamon layers are created.

– Place the two eggs and milk into a medium sized bowl. Whisk these two ingredients together well. Now pour the mixture over the top of the bread, coating it as evenly as possible. Leave the bread to stand for ten minutes, giving it a chance to absorb the milky mixture.

– Put the dish in the oven for about 40 to 45 minutes. The aim is not only for the pudding to set, but also for the top to have a golden-brown appearance. When done, remove from the oven.

– With the bread and butter pudding element complete, its time to focus on the whipped cream. Note: you will require the assistance of a whipped cream dispenser for this step. With the dispenser ready, pour the Sweetbird French Vanilla Syrup and fresh cream into the device, securely close the lid, and attach a cream charger. To ensure a fluffy, evenly flavoured whipped cream is created, give the dispenser an energetic shake for up to ten seconds.

Note: Depending on the amount of whipped cream desired, it may be necessary to use multiple cream chargers/ more whipping cream. Add more syrup as required.

– The pudding is big enough to serve six people, so serve into suitable bowls. Finish by squirting a liberal amount of the French vanilla whipped cream on top.
